Easy German Currywurst Recipe with Oma’s Homemade Ketchup

The name currywurst is a short form of curry sausage. The main idea is to make it out of German-made sausage, but the curry ketchup sauce is equally significant. Its popularity is evident as around 800 million folks have it in Germany yearly.

How The Currywurst Became An Icon Of German Popular Culture

The delicious currywurst was first introduced in 1949 by Herta Heuwer during the second world war. Herta acquired curry powder, ketchup, and Worcestershire sauce from an army of soldiers in Berlin. 

She later used the ketchup, curry powder, and other spices and ingredients and prepared the currywurst sauce, which she then placed on the bratwurst (grilled pork sausage) for a fantastic twist.  

Herta didn’t stop there, she began selling the currywurst in Berlin in a small district known as Charlottenburg, and she did all this in a street stand. She sold the unique dish to construction workers who put time and effort into re-establishing the torn-down city. It reached a point where she was guaranteed to sell 10,000 of the incredible delicacy per week, leading to her starting her restaurant in 1974. 

The delicious currywurst is a famous dish across Germany, ranging from diner restaurants to fast food stations. However, the flavour slightly differs from town to town as she never fully shared the famous recipe with anybody. 

What’s even more interesting is that theres a museum known as Deutsches Currywurst Museum that was set up to honour the currywurst. The museum receives around 350 000 local and foreign tourists yearly. However, it was shut down entirely on 21st December 2018. 

How To Make Currywurst

You must have the proper ketchup to make the best currywurst out here. I recommend homemade ketchup if you can make it, but any other ketchup would do. However, ensure that the ketchup isn’t too sweet or salty for the right balance. 

Quite a significant number of people prefer going for store ketchup( and theres nothing wrong with that), but homemade ketchup has a different taste and feel. It has the perfect twist as you’re the one who regulates how it will pan out. 

How To Make Homemade Ketchup

You’ll first need to mix honey, tomato paste(If you’re vegan, you can use maple syrup), salt, white wine vinegar, onion powder, and water in a saucepan. 

After that, you’ll need to ensure you let the mix simmer on medium heat whilst you’re repeatedly stirring. You’ll have to simmer for around 5 minutes to ensure that it’s thick the way you like it. Lately, you’ll need to let it cool in the fridge. 

How To Make My Easy Currywurst Sauce Recipe

Nothing beats a homemade currywurst sauce as it has the perfect blend and twists you need in your dish. I know you can quickly secure a currywurst sauce in grocery stores but what if you could make the perfect one that fits your needs?

You’ll need to assemble your ingredients and place them in a bowl; mix curry powder with tomato ketchup, onion powder, chilli powder, sweet paprika, smoked paprika, honey, water and Worcestershire, then you’ll have to cover it for at least 12 hours. 

How To Make The Best Currywurst 

It might sound irrelevant, but securing the proper sausage is significant. If you can, use Weisswurst, Bockwurst Bavarian Bratwurst or Knackwurst. 

And if you secure an already cooked sausage, you’ll only need to fry it mildly, but if they are not cooked, then you’ll need to simmer them gently in a pot of water for a couple of minutes before mildly frying it using olive oil. Use adequate oil to make it crispy. 

Alternatively, you can use an air fryer( if possible, use the MAXX air fryer) to fry the bratwurst at 400°F for 10 minutes while only turning it once. You’ll then need to cut the sausages accurately, place the curry ketchup( homemade or not) on top of the sausages and put in some curry powder. After that, you’ll need to serve the dish with Pomme Frites or German bread rolls( Brötchen).

Homemade Ketchup Recipe:

Ingredients:

  • Six oz can tomato paste
  • ¼ cup honey
  • ½ cup white wine vinegar
  • ½ teaspoon salt
  • ¼ onion powder
  • Three tablespoons water

Instructions:

  1. Mix everything in a saucepan.
  2. Ensure it simmers on medium heat while stirring repeatedly.
  3. Ensure it simmers for 5 minutes and stops when it’s thick. Give it time to cool.
  4. You can keep it in the fridge or make a curry sauce.

Currywurst Recipe: 

Ingredients:

  • One cup of tomato ketchup 
  • Five teaspoons of mild curry powder
  • One teaspoon of chilli powder
  • ½ teaspoon onion powder
  • pinch ground cloves
  • Two teaspoons of smoked or sweet paprika powder
  • Two teaspoons honey
  • Two teaspoons of Worcestershire sauce
  • One teaspoon water
  • Made German bratwurst 

Instructions:

  1. Place ketchup in a round dish or bowl and mix with the other ingredients. 
  2. Enclose it and place it in the fridge for 12 hours to marinate. 
  3. Cut down the sausage into slices and place the curry ketchup sauce and powder.
  4. Serve with a bread roll (Brötchen) or French fries  (Pommes Frites).

Notes/Hints:

  1. Ensure you make the curry ketchup to give it time to marinate properly. 
  2. If the sauce becomes too thick, you can add a little water. 
  3. The chilli powder will depend entirely on the level of spiciness you prefer. Alternatively, you can omit it altogether. 
  4. If you need more heat, you’ll need to include hot paprika or cayenne pepper or experiment with other hot spices. 
  5. Get yourself the ultimate German sausage you can get your hands on, like Weisswurst, Bockwurst, Bavarian Bratwurst and Knackwurst. 
  6. Ensure the sausage’s skin is crispy for added flavour and taste. 
  7. If you’re vegan, you can substitute brown sugar or maple syrup for honey or use a vegan Worcestershire sauce.
