While trout fishing in pure waters, with a bottle of scotch in hand and lush barley fields before him, Bill Lark decided that Tasmania should really be making its own whisky.

Two decades and various international awards later, he and his wife Lyn, daughter Kristy and friend Mark Nicholson have pioneered a quality of whisky distilling that is scaring the kilts off the Scots, and we know they don't scare easily.
