You mightn’t think Melbourne’s Smith Street would have much to offer a discerning gin maker. But not only is it full of distillable vegetation, such as lemon eucalyptus and olive leaves, it’s also home to expert distillery The Craft & Co.
We teamed up with the guys over there to create our own limited-run gin, using locally plucked botanicals (including the above-mentioned eucalyptus and olive leaves) and other native ingredients such as mountain pepperberry and finger lime. We're keeping the exact recipe close to our chests, but you can take a look at the full ingredient list in the photos below. (Browny points if you can identify all of them.)
